2 lbs. lean ground turkey
1 15 oz. can dark red kidney beans (undrained)
1 15 oz. can light red kidney beans (undrained)
1 28 oz. can crushed tomatoes
2 large yellow onions, chopped
2 green bell pepper, chopped
3 cloves garlic, minced
1 c. frozen sweet corn
1 T. chili powder
2 T. honey
1 tsp. crushed red pepper
3 T. red wine vinegar
½ tsp. ground cumin
Sea salt to taste
Shredded cheese and Greek yogurt for garnish.
In a 4 quart Dutch oven brown the ground turkey. Add the undrained beans and tomatoes, onions, green peppers, garlic, sweet corn, chili powder, honey, red pepper, vinegar, and cumin. Cover and simmer the chili for 1 hour, stirring frequently to avoid scorching. I like to use low sodium beans and tomatoes and add salt and additional crushed red pepper to taste. Other meats such as ground beef or pork may be substituted. This recipe cooks beautifully in a crock pot at 4-6 hours on low.
